| Wines for BBQ by Fred's Avalon Liquor Store Now that the rainy days of June have cleared, and the barbecues are in full swing, its time to open up some great wines to go with your grilling favorites. There are some basic rules when pairing wine and food that should make barbecue and wine pairing easy. The pairings become difficult when we add rubs, marinades, and sauce. A lot of barbecue marinades are sweet which tends to make lighter wines taste thin and sharp, but they may also be spicy, so you don't want a wine that is too tannic or oaky. The wine you choose should be big, bold, and assertive with forward fruit flavor, spice and pepper, as well as good acidity. The wines should be quaffable, smooth, delicious and easy to drink. If the main course is grilled, but not barbecued, go with a similar wine you would normally pair, but with more intensity to allow for heightened flavor. With a simple grilled fish try a crispy sancerre. If the fish is seasoned with a spicy rub and cooked over coals, you might prefer a zesty New Zealand sauvignon blanc. A lightly herbed and smoked chicken is delicious with a cru Beaujolais. Chicken grilled with tomato based sauce goes well with red zinfandel. Pulled pork with a tomato based sauce also goes with red zinfandel, but when using a lighter sauce try a lighter style pinot noir or a red wine from Spain. Brisket calls for big bold spicy wines such as shiraz, red zinfandel, or Cote du Rhone. Pork ribs cooked in a Memphis style with no sauce, but a spicy rub; can be paired with a lighter style pinot noir or Spanish red, while ribs grilled with a South Carolina mustard based sauce goes well with Sauvignon blanc. Zinfandel has a natural affinity to barbecue foods. With a wide range of flavors and diverse styles it is the perfect partner at the grill with lamb chops, baby back ribs,grilled pizza , sausages and hamburger. Try: PEACHY CANYON INCREDIBLE RED-from Paso Robles - a great everyday wine with juicy dark fruit black cherry flavors and a whisper of smoke. DASHE ZINFANDEL - This Dry Creek Zinfandel has dark fruit, is mouthfilling and rich. The combination of black raspberry and chocolate flavors combined with its velvety texture makes this a perfect wine with a wide variety of food from barbecue and grilled meats to pasta with hearty sauces. THREE ZINFANDEL - A new wine from Matt Cline. Three has a deep purple color, aromas of dark red fruit and white pepper, sweet fruit on the palate and finishes with a hint of spice. Throughout the southern Rhone 2007 is a fantastic vintage! The Cote du Rhones from this area are not only great values they go great with grilled and barbecued meats Try: DOMAIN REMEJEANNE COTES DU RHONE - made from a blend of grapes this wines substantial color complements powerful aromas of blackfruits, berries, and spice. More recommended wines for grilling: RAW POWER SHIRAZ - This wine is an incredible value! It has aromas and flavors of chocolate coated licorice, tar ,jammy blackberry fruit, ripe cherry and a nice lick of cinnamon spice. ATTECA GARNACHA SPAIN - Ripe boysenberry and blueberry on the nose, with licorice and graphite adding complexity. Juicy dark berry flavors picking up smoky minerals with air. A delicious wine! Recommended white wines for grilling GRUET BLANC DU NOIRS - This sparkling wine from New Mexico is rich and creamy with crisp apple fruit and enough weight to hold up to grilled food. This wine enhances and refreshes. BROCK SANCERRE - Located in the heart of the Sancerre region of France, Domaine Brock has complexity and richness, while at the same time aromatic qualities and lively freshness. MOMO SAUVIGNON BLANC MARLBOROUGH NEW ZEALAND - Light and citrusy with grapefruit, tangerine, and green melon flavors that linger on the bright juicy finish. ARONA SAUVIGNON BLANC - Also from the Marlborough region This is a great wine for the money! It is totally zippy, with gooseberry, citrus fruit, and a fresh yummy finish! All of the above wines will benefit from being chilled, especially in the heat of summer. 65 degrees Farenheit is a good temperature to aim for reds. Chill your reds for fifteen minutes in the fridge or keep cool and remove one hour before drinking. HAPPY GRILLING |
| "Going Green" Wines For some wineries "Going Green" is not a new practice. Many serious winemakers have been implementing natural farming methods for years. Natural farming methods have become popular around the world with many different levels of natural farming practiced. Organically farmed wines are made from grapes that have been grown without the use of pesticides, herbicides, fungicides or chemical fertilizers. Biodynamic wineries follow the principals of organic farming, but go well beyond. Special preparations are used to enhance the life of the soil. The preparations are added to compost which is then added to the soil. Of course this is only a small part of the biodynamic process. Practicing Organic and Practicing Biodynamic wineries follow the same technology, as the above, but don't want the added cost or bureaucracy of registering to be certified. Some of these wineries do not want to give up the ability to use spray in case of an emergency in the vineyard which could cause the loss of an entire crop. Sustainable farming has no set standards. The grape grower uses the smallest amount of chemicals possible, applying them only when and if needed. 100% Organic wines have been farmed organically with no added sulfites. There is sometimes confusion when people equate organic wines with sulfite free, but this is inaccurate. Sulfites are a natural byproduct of fermentation. Fermenting yeast present on grape skins generates naturally occurring sulfites. Sulfites have been added to wine for over two hundred years. Sulfur inhibits the growth of bacteria and mold. In the United States wine can contain 350 parts per million of sulfites. Organic wines are limited to 100 parts per million. Most organically grown wines contain less than 40 parts per million. Only 4% of the entire population is considered allergic to sulfites. Many people, however, have a low tolerance for sulfites; some reactions are hives, cramps and flushing of the skin. Organically grown wines are a good choice for these people since they contain minimal amounts of sulfites. All in all wines made from organically grown grapes are better for the earth and you. The wines are more flavorful with a clearer, cleaner taste. Many are rated as the top wines of their region. | Domain Ricard Sauvignon Blanc Touraine Petiot 2008- (certified biodynamic) This fresh vibrant Sauvignon originated from the southern bank of the Loire Valley. | Wallace, Shiraz/Grenache By Ben Glaetzer Variety: 80% Shiraz, 20% Grenache Region: 100% Barossa Valley (Northern Ebenezer region) The 2006 Wallace, tasted from a barrel sample, is a 80% Shiraz, 20% Grenache blend with an identical oak treatment. | Domaine Serene, Evenstad Reserve, Pinot Noir The enticing nose displays a complex array of cherry pie, raspberry cordial, marionberry, dried orange peel, caramel, vanilla and allspice. The palate delivers intense black raspberry, elderberry, pomegranate, rose petal, sassafras, oak spice and fine-grained tannins. The result is a wine possessing incredible power, length and complexity. This wine is in Wine Spectator's Top 100 Wines of 2008. | Allegrini Palazzo della Torre IGT Veronese This blend of 70% Corvina Veronese, 25% Rondinella and 5% Sangiovese is a smooth, full-bodied cru made in an innovative ripasso style. After the harvest, the grapes from the Palazzo della Torre vineyard follow two different paths: 70% of the grapes picked are vinified immediately, the remaining 30% are left to dry until the end of December. | Uva Mira, Sauvignon Blanc Wine Information: Full vibrant, nose showing green pepper, tropical fruit and some dusty notes. An eloquent palate with sweet fruit offset by lively acid, a lip smacking long finish with body and crispness thrown in for good measure. Highest Sauvignon Blanc vineyards on the Slopes of the Helderberg in the Stellenbosch Region; 620 metres above sea level. Predominantly decomposed granite and shale. The juice was handled reductively and left to settle for 3 days after which it was racked and inoculated to ferment at low temperatures. Left on the lees for 3 months before blending and bottling. It's essential for us to be able to focus on the uncompromising quality of every tank and barrel, and the relative smallness of our winery enables us to do this - for example, in the past harvest we were able to do batch ferments of just one ton. All grapes are hand-picked only in the early morning during cooler weather, placed into lug boxes (wherein smaller quantities mean reduced compaction and damage to the fruit) and then hand-sorted on sorting tables. All pressing cycles are gentle and only free-run juice is used. For some wineries "Going Green" is not a new practice. Many serious winemakers have been implementing natural farming methods for years. Natural farming methods have become popular around the world with many different levels of natural farming practiced. Organically farmed wines are made from grapes that have been grown without the use of pesticides, herbicides, fungicides or chemical fertilizers. Biodynamic wineries follow the principals of organic farming, but go well beyond. Special preparations are used to enhance the life of the soil. The preparations are added to compost which is then added to the soil. Of course this is only a small part of the biodynamic process. Practicing Organic and Practicing Biodynamic wineries follow the same technology, as the above, but don't want the added cost or bureaucracy of registering to be certified. Some of these wineries do not want to give up the ability to use spray in case of an emergency in the vineyard which could cause the loss of an entire crop. Sustainable farming has no set standards. The grape grower uses the smallest amount of chemicals possible, applying them only when and if needed. 100% Organic wines have been farmed organically with no added sulfites. There is sometimes confusion when people equate organic wines with sulfite free, but this is inaccurate. Sulfites are a natural byproduct of fermentation. Fermenting yeast present on grape skins generates naturally occurring sulfites. Sulfites have been added to wine for over two hundred years. Sulfur inhibits the growth of bacteria and mold. In the United States wine can contain 350 parts per million of sulfites. Organic wines are limited to 100 parts per million. Most organically grown wines contain less than 40 parts per million. Only 4% of the entire population is considered allergic to sulfites. Many people, however, have a low tolerance for sulfites; some reactions are hives, cramps and flushing of the skin. Organically grown wines are a good choice for these people since they contain minimal amounts of sulfites. All in all wines made from organically grown grapes are better for the earth and you. The wines are more flavorful with a clearer, cleaner taste. Many are rated as the top wines of their region. | Spanish Wines By Kathy Todaro For many wine lovers searching for new values in this difficult economy, the recent development of young Spanish reds has proven a great discovery. The red wines of Rioja and the sherries of Jerez are the most famous of Spanish wines but a whole range of other quality wines are available from its diverse and individual regions. The heartland of the great Spanish reds is represented by the wines of Rioja, Ribero del Duero and Navarra, while the top whites come from Rueda and Penedes in Catalonia which is home to the Cava industry (Spanish Champagne). Spain was the first country to have laws defining quality, yet its quality wine market is still very young. What should you look for on the label? Crianza: Crianza spend between 6-12 months in oak casts. Reserva: Reservas are aged a minimum of 1 year in oak casks and 2 years in bottles or a combination of both with a minimum of one year in casks. The La Piramide vineyard offers honeyed tropical fruit flavors with a rich, unctuous mouthfeel. The Domingo vineyard lends citrus notes with a crisp finish. The Adrianna vineyard contributes pear and fig flavors with a strong minerality. The wine shows an intense greenish color with light yellow notes. The aromas offer ripe mango fruit flavors with notes of peaches and hints of fruitcake spices. The mouthfeel is full yet clean, with fresh, crisp acidity. Alejandro Vigil, Chief Winemaker Catena Malbec The 2007 Catena Malbec shows a dark violet color with deep bluish - black tones. The nose offers ripe, concentrated dark fruit aromas with delicate floral notes and traces of vanilla and mocha. The mouthfeel is rich and lush, with concentrated black cherry and red currant fruit flavors layered with sweet spices, tobacco and a touch of leather. The finish presents soft, supple tannins with bright, crisp acidity and a flinty minerality which gives the wine exceptional length. The fruit for the Catena Malbec undergoes a short pre-fermentation, cold maceration for 5 days at a temperature of 48 F. This process allows for excellent extraction of aromas and color. The juice is then fermented between 75 - 80 F. These moderate temperatures allow for wonderful mid-palate extraction while avoiding any harsh or bitter tannins. The wine is aged in a blend of French and American oak for 12 months, with 35% new oak adding wonderful layers of complexity.
